Today’s Nuda feature is EVOO.
EVOO is located on the trendy rue Notre Dame, and is a stones throw away from the Atwater Market. This lovely restaurant is a collaboration of 3 awesome young professionals. EVOO serves contemporary French cuisine, combining traditional and modern techniques. This stylish yet casual restaurant du quartier uses seasonal ingredients, and everything served at EVOO is made from scratch in house and they work directly with farmers. Chefs Peter Saunders and Sophie Oulette are no doubt creating some serious magic in that kitchen.
EVOO is giving this homemade feel-good meal a world of TLC. The chefs decided to create handmade Cavatelli pasta – the idea is that the pasta will hold sauce inside (!), made with Béchamel sauce, nutmeg, bayleaf, breadcrumbs. parmesan, crispy bacon. The dish will be created in a skillet and baked in the oven.
